The Island Shangri-La, Hong Kong's stunning Restaurant Petrus will present guests with a vertical tasting of six Chateau Palmer vintages to pair with Chef Frederic Chabbert's five-course menu. The dinner, on 11 September 2008, is HK$2,788 per person.
The sumptuous dinner will begin with Scrambled Organic Marans Egg with Truffle Beef Jus and Goose Liver Mouillette paired with Alter Ego de Palmer 2001 and Alter Ego de Palmer 2004. The latter two wines are the result another of the Chateau Palmer's interpretation of the growing conditions, yielding fruity and intense aromas from using new oak barrels as part of the ageing process.
Chateau Palmer, 3eme Cru Classe 2000 paired with Simmered Paimpol Cocoa Bean Corsican Prisuttu, will follow. For the third course, guests are offered Grilled Aveyron Lamb Saddle matched with Chateau Palmer, 3eme Cru Classe 1990 and Chateau Palmer, 3eme Cru Classe 1995. Both of the 1990 and 1995 vintages are exceptional and a perfect reflection of the fine weather during the two years.
After the main course, diners move on to Bernard Antony cheeses - the Roquefort and Pont l'Eveque - that will accompany Chateau Palmer, 3eme Cru Classe 1998. For dessert, guests will have a Thin Black Fig Tart with Arbousier Honey Ice Cream.
Island Shangri-La, Hong Kong's Restaurant Petrus commands views of Hong Kong's Victoria Harbour and has one of Asia's largest wine cellars, featuring a premium Petrus collection and extensive vintages from other famous chateaux. Restaurant Petrus opens daily for breakfast from 7 to 10 a.m., for lunch from noon to 2:30 p.m. and for dinner from 6:30 to 10:30 p.m.
